Zafirah is a red wine that revives the historical tradition of the Monção region.
These wines were first mentioned in a charter by King Afonso III in 1286 and were known for their quality from the 14th to the 16th century, so much so that they were even exported to England as a substitute for Burgundy.
For Zafirah, Constantino Ramos uses four small, over 50-year-old espalier vineyards (Ramadas) to reinterpret this traditional wine style.
In the glass, Zafirah presents itself with an open ruby red color. The aroma is fruity with clear notes of strawberries and raspberries as well as balsamic hints. On the palate it is deep and soft with notes of fresh red fruits and spices, especially black pepper.
The wine is characterized by an open color, lightness, freshness and pronounced acidity. It has a moderate alcohol content and is described as graceful.
Zafirah is a blend wine dominated by the Alvarelhão variety, complemented by Borraçal, Pedral, Espadeiro and a small proportion of Vinhão. The grapes are carefully handpicked and rigorously selected, using only perfectly healthy fruit.
The production process includes complete destemming, followed by a 24-hour pre-maceration and subsequent pressing. Fermentation takes place two-thirds in stainless steel tanks and one-third in French oak barrels. The wine is aged for six months and is produced with minimal oenological interventions to preserve its natural character.
Thanks to its pronounced acidity, Zafirah is very versatile when paired with food. It goes well with light dishes such as sushi or pasta as well as with more complex, fatty dishes and even desserts. The recommended drinking temperature is between 12 and 14°C.
