This mountain pig terrine with spruce wood and smoked bacon was created by Emmanuel Renaut in his restaurant "Flocons de Sel" Megève.
The French celebrity chef has been awarded 3 Michelin stars, 5 Gault & Millau chef's hats and the 2019 Gault et Millau d'Or 2019. He is also Meilleur Ouvrier de France. Emmanuel Renaut loves the mountains and is inspired by them for his creations.
The smoked peasant bacon comes from Stéphane Milleret from the Boucherie des Halles , in Chambéry. He is a member of the Collège Culinaire de France and is one of the best butchers in France.
Like all Maison Telme terrines, this terrine is extremely juicy and delicately seasoned.
Enjoy them with a lamb's lettuce or simply on their own on toasted or fresh country bread, with good friends and a glass of wine ... bon appétit!
