For La Perle des Dieux, this monkfish liver is prepared in a traditional way in a small canning factory on the Ile d'Yeu.

For this purpose, the fish liver is gently cooked with all sorts of spices and herbs, which reveal and underline all their aromas: from chilli to coriander to turmeric and vanilla.
