These freshly caught large sardines from the bays of Galicia are immediately deep-fried and then painstakingly hand-crafted into beautiful, skinless, boneless sardine fillets. We're not usually keen on sardine fillets because they're too dry, but we're happy to make an exception here; they're perfect.

The sardines are ideal for tapas and mixed starter plates, but also taste wonderful with pasta, rice, on pizza, in salads
