These exquisite sardines with pesto and Brittany seaweed combine the sunny aromas of basil, olive oil, and Parmesan with the iodine-rich notes of cooked Breton seaweed to create a truly special taste experience.
The sardines are freshly processed, come from responsible fishing and are landed in Breton ports.
The traditional production involves hand-heading and gutting, followed by frying in sunflower oil before packaging, hand-filling in cans and finally a 45-day maturation period before marketing so that the fish can slowly absorb the extra virgin olive oil.
The pesto is made on the day of bottling from high-quality ingredients: 12 to 15 months aged DOP Parmesan, pine nuts, garlic and basil.
A Breton touch is added by a blend of wild seaweed with capers and gherkins. The sea lettuce, dulse, and sea beans are harvested in the Iroise Sea Marine Park on the coast of northern Finistère.
These sardines are delicious with good bread and salted butter. They also make an excellent appetizer on toast, cut into small pieces and topped with the pesto mixture. They can also be used on tarts or pizzas.
The sardines are caught primarily off the Breton coast and processed using centuries-old methods. To ensure optimal nutritional values, especially high omega-3 content, they are caught exclusively between May and October, when the sardines reach their peak quality.
The refinement of these preserves is particularly remarkable: Over time, they develop an even finer aroma and can be stored for several years without any problems - they become more flavorful with each passing year.
