This delicious recipe subtly combines the delicacy of sardines with the iodine-rich aromas of the seaweed from Roscoff and is rounded off with sunny herbs from Provence.
The seaweed tartare is refined with capers and garlic, then marinated in extra virgin olive oil. A delight waiting to be discovered!
The sardines "à l'ancienne" are prepared by hand in Brittany using a unique method.
After beheading, gutting and frying, the sardines are freshly packed in boxes and refined with wild algae from Roscoff (sea bean, dulse, wakame) and cultivated algae (lettuce).
The seaweed is seasoned with capers, garlic, and herbs de Provence, and marinated in olive oil. This product has an excellent nutritional content for health.
Delicious served with good bread and salted butter, or as a main course with potatoes and a green salad.
Ideal on toast as an appetizer, cut into small pieces and drizzled with a little seaweed-candied oil. For homemade rillettes, mash with cream cheese.
The sardines are mainly caught off the coast of Brittany and processed using centuries-old methods. For optimal nutritional value, especially a high omega-3 content, fishing takes place exclusively between May and October, when the sardines reach their best quality.
Particularly noteworthy is the refinement of these preserves: Over time, they develop an even finer aroma and can easily be stored for several years - they become more flavorful with each passing year.
