To allow the fish to fully develop its flavor, place the closed can in lukewarm water for a few minutes to melt the butter. Then pour the contents of the can into a pan and gently heat the fish over low heat to preserve its texture.
Alternatively, you can also heat the sardines in the oven or microwave.

Eating warm sardines is an old Breton tradition. Heating them allows the fish's flavor to develop in a particularly intense way. At Belle-Iloise, all sardines are caught using a special net, the bolinche, and processed immediately. Before olive oil began its triumphant global advance, Breton sardines were usually preserved in butter or Muscadet wine.
