These anchovies are a real surprise because, like sardines, they are fried whole, or without the head, tail, and intestines, in oil, drained, and carefully filled into cans by hand.
The flesh of these anchovies is firmer and their flavor is stronger, and because they are marinated in olive oil like sardines, they do not taste salty like regular anchovies.
They are then covered with extra virgin olive oil and seasoned with just a pinch of salt.
