Rouille is a thick sauce, similar to mayonnaise, with lots of garlic and red pepper and/or saffron, traditionally served with bouillabaisse and other fish soups and dishes.
The name rouille (French for "rust") refers to its yellow-red color. It is usually served on a slice of white bread rubbed with garlic (and often toasted).
Enjoy them with fish soup, for example any kind of fish soup , fresh boiled potatoes or simply with a piece of fresh bread.
