A rouille is a creamy mayonnaise-like sauce with lots of garlic and red peppers and/or saffron that traditionally accompanies bouillabaisse and other fish soups and dishes. The name rouille (French: rust) refers to its yellow-red color. It is usually served on a slice of white bread rubbed with garlic (and often toasted).

Enjoy them with a fish soup, for example any kind of fish soup , fresh boiled potatoes or simply with a piece of fresh bread.

Manufacturer

The Conserverie Artisanale Azaïs-Polito specializes in processing Mediterranean fish. This small factory is now the last Conserverie in the city of Sète, once the largest fishing port in the Mediterranean. It was founded in 1963 through the (love) merger of two long-established families, which also gave it its name. The Azaïs were famous fishermen, fishmongers and indeed even the founders of the fish market in Sète. The Polito were pasta manufacturers with Neapolitan roots. The founders Giovanni Polito and Geoges Azaïs still manage the company today, now in the fourth generation!

All products are handcrafted from carefully selected ingredients and prepared according to old original recipes and impress with their good taste.

Schöne Konsistenz, leichte Schärfe, angenehmer Geschmack. Schmeckt sehr gut einfach auf Brot oder als Dip. Ich kann sie mir aber auch zu gebratenem/gegrilltem Rind vorstellen.
