The starting point for production is the selection of the best raw materials. Sea urchin caviar, which is very popular in France, Japan and Spain (especially in Cantabria and Galicia, in Catalonia, Cádiz and the Balearic Islands), is particularly good with scrambled eggs, soup, cream and pasta.
