Traditionally made pork rillettes made from chopped lean and aromatic black pig meat from the Pyrenees (Porc Noir de Bigorre), slowly cooked and preserved in a spicy broth.
The coarse, characteristically fibrous texture and delightfully aromatic taste make these pork rillettes the perfect appetizer on crusty bread or toast. Crunchy gherkins provide a nice contrast!

Le Porc Noir de Bigorre
In 1981, the Noir de Bigorre breed of pig was almost extinct. It owes its revival to a handful of breeders in the Hautes Pyrénées region who, out of respect and attachment to the family and regional heritage, made it their goal to preserve the breed.
The black pigs are bred in the Bigorre region in the heart of the Pyrenees according to strict regulations and are characterized by an incomparably melting, tasty meat with a bright red colour.
