Pure hazelnut puree made from the particularly aromatic Piedmontese hazelnuts Tonda Gentile delle Langhe , probably the best hazelnuts in the world. Liquid, fine, incredibly aromatic, with the unadulterated hazelnut taste and only naturally sweet.
This recipe was originally intended for professional use in pastry shops and ice cream parlors, but can also be used to make ice cream and cakes at home or to round off desserts, for example crème bavaroise, yoghurt or quark dishes.
