Piment d'Espelette AOC is a special chili from the French Basque Country, more specifically from the region around the town of Espelette (Basque: Ezpeleta). The protected designation of origin "AOC" (Appellation d'Origine Contrôlée) guarantees that this chili may only be cultivated and processed in ten specific municipalities in this region.
This mildly hot chili has a distinctive red color and a delicate, smoky, fruity flavor. Its heat rating is around 4,000 Scoville units, making it significantly milder than, for example, cayenne pepper.
Traditionally, after harvesting, the chili peppers are woven into long strings (called "guirlandes" in French) and hung on house facades to dry—a typical sight in this region. After drying, they are ground into a fine, bright red powder.
In Basque and French cuisine, Espelette pepper is often used as a refined spice, especially in the preparation of meat and fish dishes, but also in sauces and soups. It is one of the few spices regularly used in classic French cuisine.
