Harvesting sea beans is a special process that is tied to the time of the spring tide.
When the water is particularly low at low tide, the harvesters wade into the sea up to their thighs. Using a special cutting tool resembling a sickle (serpe), they cut the algae right at their base. Particular care is taken to remove the sun-stained, yellowed parts that float on the water's surface.
The comparison to canned extra-fine green beans aptly describes their texture—they're just as soft and delicate. These qualities make them a special "sea vegetable" that's distinctly different from other types of algae.
After harvesting, the sea beans undergo a careful processing process: First, they are washed in purified seawater and then transported in containers for further processing. The next day, the seaweed is prepared for preservation in the processing workshop. For this, it is trimmed again and placed in natural salt water (curing water).
In terms of quality and texture, sea beans are characterized by their special texture: they are amazingly tender and have a pleasantly melting consistency in the mouth.
