This lamb and mint terrine was created by Jany Gleize . The renowned French chef holds one Michelin star and runs the restaurant La Bonne Etappe at Château Arnoux in the Alpes-de-Haute-Provence region.
His cuisine focuses on the essentials and is strongly inspired by the region. Most of the vegetables, flowers, and herbs he uses come from the castle's own garden.
In this succulent and balanced terrine, three different types of mint work together to create an unforgettable taste that perfectly complements the aromatic lamb: lady's mint, small-flowered mountain mint, and the well-known peppermint.
Enjoy the terrine best with a field salad or simply on fresh, toasted country bread. Add a few good friends and a glass of wine – that's all you need... bon appétit!
