Maison Marthe is a canned fish factory and restaurant in the port of La Cotinière on the island of Oléron.
What is special about Maison Marthe's work is that the fish fillets are crumbled by hand to refine the flesh and preserve the pieces. The fillets are not blended, as is usual in canning factories, in order to process them more quickly.
