Discover the famous smoked albacore tuna from Île d'Yeu, a delicacy that combines traditional methods and local ingredients.

This exclusive tuna is caught in the Bay of Biscay between July and September by boats from Vendée or Brittany and then traded at auctions in Vendée.

Once it arrives on the Île d'Yeu, the tuna is carefully cut up by hand. It is salted using the finest sea salt from Noirmoutier, followed by careful cold smoking over beech wood.

This refinement gives the tuna an incomparable aroma. After smoking, the fish is slightly dried and marinated in high-quality sunflower oil, which preserves its juiciness and freshness.

Enjoy a piece of authentic craftsmanship that is ideal as the highlight of any meal, whether as a main course or as a sophisticated ingredient in salads and aperitifs.

Albacore tuna, known locally as Thon blanc germon (*Thunnus alalunga*), is the staple fish of Île d'Yeu and is particularly prized for its firm texture and mild, rich flavour.

It comes from sustainable French fishing in the Gulf of Gascony. This tuna is not only a favorite in French cuisine, but is also very popular internationally in countries such as Japan, Spain, Portugal and Italy.

Get inspired and discover delicious recipe ideas in our menu item " Recipes = Fish " on our website. This product is ideal for connoisseurs who value quality and taste and appreciate the maritime flair of the Île d'Yeu.

Welcome aboard the Île d'Yeu cannery. Join us on our legendary adventure of the island, at the heart of which is the Hennequin family, especially Gaston and his father.
A true sailor and proud son of the Île d'Yeu, Gaston's father was known for his character and his joie de vivre. Aboard the sardine ship Marie-Jeanne and together with his five sailors, he fished for sardines and tuna, which he sold to local processing factories - even during the Second World War.

In the 1950s, Gaston, influenced by his father's love of the sea and his passion for fishing, brought these traditions ashore when seasickness forced him to leave the sea. Undaunted, he opened his artisanal fish shop in 1960, supplying the islanders with fresh fish that he collected on his tricycle. This extraordinary determination earned Gaston great recognition among the islanders and marked the beginning of a thriving business.

The Hennequin fish shop, located right on the port, was a hive of activity every day. In the 1960s, when the Île d'Yeu became France's leading tuna port, it also attracted thousands of tourists. Supported by their four children, including little Bernard in his blue rubber boots, the family quickly seized the opportunity and modernized their business by setting up a processing workshop.

The island's canning factory became increasingly important in the family business and Bernard, returning from a stay on the mainland, took over the management. He brought a breath of fresh air and his passion for the island by developing high-quality and tasty products.
The Hennequin family oversaw the entire production process, from fishing to marketing to artisanal canning.
The soul of the Île d'Yeu was reflected in these products, which contributed to the success of the family business.

When Bernard was looking for a successor, he immediately thought of Marie from Conserverie La Sablaise. They shared the same values and worked together regularly. Together with Quentin, they planned to merge the last cannery in Les Sables d'Olonne and that of Île d'Yeu to continue their shared heritage: a tradition of quality and passion for the sea and the island.
