The tuna fillets are minced by hand and then mixed into the exotic marinade made from coconut, red pepper, lime and spices so that the fish can absorb the full range of exotic flavors.
This recipe comes from Marie-Galante, one of the Leeward Islands of the Lesser Antilles in the Caribbean. It belongs to the French overseas department of Guadeloupe.

The name Émietté (from “miete”, French for crumbs) refers to a method of preparation in which the fish fillets are easily torn apart and then mixed with the sauce. This results in a wonderfully fresh, juicy composition in which all the flavors come into their own.
