Confit of duck magrets (2 pieces)

Juicy duck breasts (magret de canard) from ducks that have been fed mainly with non-GMO corn, preserved in the finest duck fat. Classic French home cooking that warms body and soul.

Instructions for preparation: Heat the canned food in a water bath until the fat becomes liquid, then carefully remove the confit from the fat, dab on kitchen paper, place in an ovenproof dish without fat until the skin has turned nice and golden brown.
Do not throw away the fat afterwards! You can fry fried potatoes, mushrooms or green beans in it and give them a particularly rich aroma. Add a fresh lamb's lettuce with a walnut oil vinaigrette and it becomes a whole dish. Bon Appetit!

Designation of origin protected by the IGP seal of quality (IGP = Indication géographique protégée).

First, the pieces of meat are rubbed with coarse sea salt from Guérande salt, in which they then rest and soak for 3 to 4 days. The meat is then covered with its own fat and slowly cooked over a low flame.
