A generous vintage

Harvesting started early in the season to harvest the early grape varieties before they were too ripe. The September rains resulted in an increase in juice yield as well as a rebalancing of musts. The perfect state of health of the grapes made it possible to produce fat, full-bodied white wines with good length on the palate.

Very pale yellow colour, very bright with green reflections. The nose presents a whole spectacle of southern notes: fennel, almonds, aniseed and raisins. In the finish then aromas of ripe white fruit and some nutmeg.

Lush and rich on the palate, and yet absolutely balanced by a mineral tension. A generous wine with a nice freshness.

Pairing recommendation:
As a starter on bread with Colonnata bacon, smoked ham or tapenade, with fried langoustines, poached sea bass fillet with ginger and fresh mint, seafood risotto...
We recommend Brie, Bleu de Gex or well-ripened Comté as cheese, and ice-cold nougat and/or lemon cake for dessert.

Drinking temperature: 10 - 12 °C

The certified organic vineyard of Domaine La Célestière covers a total of 26 hectares protected from chemical fertilizers and other herbicides.

Thanks to constant work on the soil and subsoil, combined with some organic additions, such as our own compost, the terroir can fully develop. The grapes are harvested by hand in small boxes. The grapes are then carefully selected.
The average production is therefore intentionally limited and varies between 20 and 25 hectoliters per hectare - a value that is well below the yield limit of the appellation.

Vinification and aging:
The grapes are pressed down by gravity in stainless steel tanks and thermo-regulated concrete with integrated stamping. The maceration takes place hot and cold, with a long maceration time for the red wines.

The white wines are vinified and matured in egg-shaped barrels (Betonei). With the red wines, on the other hand, the wine is aged in barriques or demi-muids (600 liter wooden barrels) depending on the vintage.

The vineyards are located on several terroirs of the Châteauneuf-du-Pape appellation.
