This Calvados matures for 4 years in oak barrels and shows distinct aromas of wood and apple.
The nose opens with notes of caramelized apple and subtle wood notes. On the palate, an appley freshness dominates, rounded off by a spicy finish.
Enjoy it after meals to stimulate digestion, either on its own (the so-called "Trou Normand") or in combination with an apple sorbet.

The protected designation of origin Calvados varieties from Pierre Huet are obtained through the double distillation of different ciders, which in turn are the result of the 12-month fermentation of apples in oak barrels.
The first distillation produces the cider. The result is the so-called "petites eaux" with an alcohol content of around 30-35% ABV. The second distillation yields the Calvados with 40% ABV.
Le Manoir "La Brière des Fontaines" is a magnificent estate with a long Calvados tradition and arguably one of the most beautiful cellars in Normandy. As early as 1941, Pierre Huet selected the cellar as a showcase property for a commission tasked with defining the "Calvados" appellation. He may well be partly responsible for the fact that only the Pays d'Auge region has its own appellation.
