This Calvados matures in oak barrels for more than 30 years.
Good tension in the nose, the apples are not dominant. Aromas of cinnamon and candied fruit. The finish is immediately long and deep, almost endless.
The finale goes to prunes (Pruneau d'Agen) and membrillo. Be sure to leave it in the glass for at least 15 minutes to experience the full range of aromas.
Enjoy it best after a meal to stimulate digestion.

Pierre Huet's origin-protected Calvados varieties are obtained through the double distillation of various ciders, which in turn are the result of 12 months of fermentation of apples in oak barrels.
The first distillation serves to distil the cider. The result is the so-called "petites eaux" with around 30 - 35% vol. The second distillation results in the Calvados with 40% vol.
Le Manoir "La Brière des Fontaines" is a magnificent property with a long Calvados tradition and probably one of the most beautiful cellars in Normandy. As early as 1941, Pierre Huet's cellar was selected as a showcase object for a commission that was to define the "Calvados" appellation. Perhaps he is not entirely innocent in the fact that only the "Pays d'Auge" received its own appellation.
