The tuna fillets are prepared and arranged by hand. Boneless, they represent the leanest and most prized part of the tuna.
The fillets are preserved in extra virgin olive oil from Navarra and very lightly salted to retain the natural flavor of this part of the wild fish. No additives, colorings, or other unnecessary ingredients!
Albacore tuna are fished off the Basque coast (Pays Basque) from the end of July to the beginning of November. Fishing is strictly regulated.
The processed fish have an average weight of 10 kg, which corresponds to an average age of 3-4 years.
The tuna comes mainly from the auction hall of Saint Jean de Luz-Ciboure in the Basque Country.
