La Truite des Pyrénées is a family business that has existed since 1953 and is now run by the third generation with 22 employees. Strategically located at the confluence of the three arms of the Pyrenees, the Barèges, Gavarnie and Cauterets, the trout farm operates using innovative and sustainable methods.

The clear, very oxygenated water offers the trout of the races Fario and Arc en Ciel (French for rainbow) an ideal habitat: their meat is particularly tender and delicate, wonderfully pure and aromatic and full of nutrients.
