To allow the butter to fully develop its flavor, place the closed can in lukewarm water for a few minutes to melt it. Then empty the contents of the can into a pan and gently heat the fish over low heat to prevent it from losing its texture.
Alternatively, you can also heat the sardines in the oven or microwave.

Eating sardines warm is an old Breton tradition. Heating the fish brings out their aroma in a particularly intense way. In Belle-Iloise, all sardines are caught with the bolinche, a special net, and processed immediately. Before olive oil became so popular worldwide, Breton sardines were usually preserved in butter or Muscadet wine.
