Pieces of grilled duck meat prepared with garlic, shallots and spices. Yummy! A local specialty of fine grilled duck, perfect for a quick, simple lunch, as an aperitif on toast or, in summer, with a good baguette for a picnic in the meadow.
In south-west France, particularly in the Périgord, geese and ducks are an integral part of the gastronomic landscape.
Of course, foie gras and confit are particularly well-known. Fritons (crispy fried duck cracks) are made from small pieces of meat, fat and skin.
They don't require much effort and can be eaten almost casually, eg deglazed lukewarm with raspberry vinegar on a crunchy salad with a walnut oil vinaigrette.
Store in a dark, cool, dry place. Use up shortly after opening.
