The tuna fillets are chopped by hand and then mixed into the exotic marinade of coconut, red bell pepper, lime and spices, allowing the fish to absorb the full range of exotic flavors.
This recipe comes from Marie-Galante, one of the Leeward Islands of the Lesser Antilles in the Caribbean. It belongs to the French overseas department of Guadeloupe.

The name Émietté (from "miette," French for crumb) refers to a preparation method in which the fish fillets are gently flaked and then mixed with the sauce. This results in a wonderfully fresh, succulent composition where all the flavors are fully appreciated.
