The so-called "paradise grain" is an African pepper with only a mild heat but a full aroma, which in this recipe is complemented by poppy seeds and fresh mustard seeds. A touch of acidity comes from the white balsamic vinegar, a hint of sweetness from the sautéed onions… An exciting recipe that tastes of sunshine and the South Seas!
The name Émietté (from "miette," French for crumb) refers to a preparation method in which the fish fillets are gently flaked and then mixed with the sauce. This results in a wonderfully fresh, succulent composition where all the flavors are fully appreciated.
