Recipe for 4 people

- 4 large ripe tomatoes
- coriander leaves (roughly chopped)
- 1 finely chopped onion
- 3 tablespoons good olive oil (fruité vert)
- 1 tablespoon balsamic vinegar
- 1 teaspoon fleur de sel
- Pepper from the mill (e.g. Kappad)

- In a bowl, mix together the onion, fleur de sel, balsamic vinegar and olive oil
- Cut the tomatoes into medium-thick slices

- Arrange the tomato slices on a large plate
- Pepper to taste
- Pour the vinaigrette over it
- Scatter the coriander leaves on top
- You can replace the pepper with Piment d' Espelette
