Tomatensalat mit Koriander - Maître Philippe & Filles

Tomato salad with coriander

Recipe for 4 people

    • 4 large ripe tomatoes
    • coriander leaves (roughly chopped)
    • 1 finely chopped onion
    • 3 tablespoons good olive oil (fruité vert)
    • 1 tablespoon balsamic vinegar
    • 1 teaspoon fleur de sel
    • Pepper from the mill (e.g. Kappad)
    • In a bowl, mix together the onion, fleur de sel, balsamic vinegar and olive oil
    • Cut the tomatoes into medium-thick slices
    • Arrange the tomato slices on a large plate
    • Pepper to taste
    • Pour the vinaigrette over it
    • Scatter the coriander leaves on top
    • You can replace the pepper with Piment d' Espelette
