At the open tasting buffet, we serve fine smoked trout, trout caviar, as well as trout rillettes and émiettés from "La truite des Pyrénées" , a family-run trout farm in the Pyrenees.
This is something different from the same old salmon and is sure to be a nice inspiration for the upcoming Easter celebrations!
For a sparkling accompaniment, we offer Espumante Baga Rosé by Luis Pato, which pairs perfectly with fish. So be sure to stop by—we look forward to seeing you!

"La Truite des Pyrénées" is a family business established in 1953 and now, with 22 employees, is run by the third generation. The trout farm is strategically located at the confluence of the three rivers Barèges, Gavarnie, and Cauterets in the Pyrenees and is operated using innovative and sustainable methods.
The clear, highly oxygenated water provides an ideal habitat for the Fario and Arc-en-Ciel (French for rainbow) trout: their meat is particularly tender and delicate, wonderfully pure and aromatic, and full of nutrients.
