This exquisite Sancerre is a prime example of the finesse and vibrancy of its origins. Its impressive complexity, especially considering its price, comes from the combination of flint and limestone soils in the vineyards of Sainte Gemme and Sury-en-Vaux in the Centre-Loire region.
The wine, made from 100% Sauvignon Blanc, reflects the diversity of its terroir. The careful winemaking process begins with a gentle pressing of the grapes, followed by a controlled fermentation at 15-18°C. The wine then matures on the fine lees for a few months before being bottled in the spring.
In the glass, the Sancerre impresses with its light yellow color with green reflections. Its nose reveals a racy bouquet of grapefruit, white flowers and mineral flint notes. On the palate, a full-bodied, silky taste unfolds with a well-integrated freshness.
This wine is best enjoyed at 8-10°C within 2-3 years of bottling. It goes well with salmon puff pastry, fish dishes in sauce or traditionally with Crottin de Chavignol, a local goat's cheese. It also makes an interesting combination with goose liver.
