100% Rabigato from just 0.5 hectares of old vineyard planted on a mix of slate and granite soils. Hand-picked in early September with extensive vineyard sorting, whole bunch pressing without wasting time on the skins. Spontaneous fermentation takes place in stainless steel tanks using ambient yeasts. Fermentation, which takes place under temperature control, lasts about seven weeks. The wine spends about four months on the lees, being stirred once a month, and ages for four months in stainless steel tanks. Unfined and unfiltered.
Rabigato is an indigenous white wine variety in Portugal. Its cultivation was first mentioned in writing in 1771. According to the ampelographer Duarte d'Oliveira, the name has no further meaning. However, it could be a corruption of the term "Rabo de gato", Portuguese for "cat's tail".
A young, seductive wine, particularly suitable for the warm season. Serve nice and cold, preferably between 6 - 8 °C.
Goes well with: fish, goat cheese, salads, white poultry, as an aperitif... and is very versatile on its own or as an accompaniment.
