In the far north of the Burgundy region lies the Chablis wine-growing area, where only white wines made from the Chardonnay grape are cultivated. The soil there is very calcareous and rich in fossils, which gives Chablis wines their distinctive flavor. Moutard-Diligent's Chablis undergoes a very long fermentation process at low temperatures, with 50% of the fermentation taking place in oak barrels and 50% in stainless steel tanks. Chablis wines are characterized by a refreshing acidity that particularly accentuates the fruity aromas of these age-worthy wines. Typical mineral notes also blend harmoniously into the overall flavor profile.
Chablis goes very well with trout with almonds, asparagus soufflé and shellfish.

- Terroir: maritime to continental climate, calcareous soils with marl in the subsoil, which is interspersed with fossils (so-called Kimmeridgian) and gives Chablis wines their typical aroma.

The Moutard Champagne House has been owned by the same family since the 17th century and through several generations. It is situated in a picturesque landscape on the sun-drenched slopes of the Côte des Bar, in the southern part of Champagne. The soil of the Côte des Bar, composed of clay and limestone, imparts particularly rich and fruity aromas to the region's traditional grape varieties, Pinot Noir and Chardonnay, which are highly prized by connoisseurs. All Moutard wines and Champagnes are made from grapes grown on the estate or from grapes purchased from partner growers. To ensure that the Champagnes are perfectly mature and ready to be enjoyed, they age for at least three years in the cellar; vintage Champagnes mature for ten to fifteen years. The Moutard family history dates back to 1642. Old cellar records document these early activities as winemakers, upon which the family tradition is founded. Champagne production is the fruit of a true tradition, and each family develops its own techniques over time, continuously refining them.
