The philosophy of assemblage
Like its legendary namesake, this Chardonnay unites different characters into a harmonious whole. A masterful composition from three Burgundian terroirs: the mineral power of Chablisien, the elegance of the southern Côte de Beaune, and the substance of the Côte Chalonnaise north of Montagny.
Terroir diversity in perfection
The 30- to 45-year-old Chardonnay vines are rooted in the classic clay and limestone soils of Burgundy. This soil composition gives the wine its characteristic minerality and depth, while the age of the vines ensures concentration and complexity.
Precise vinification
Pressing: The grapes, cooled to 12°C, are pressed directly without destemming – a gentle method for maximum purity of the must.
Fermentation: 30% of the wine matures in traditional Burgundian barriques, while 70% ferments in stainless steel tanks. This 14-day fermentation preserves the fresh fruit aromas.
Expansion: Systematic Malolactic fermentation takes place in both barrels and tanks, followed by 10 months of aging in barriques for selected batches. Bottling occurs in October for optimal stability.
Flavor profile
Nose: A fascinating interplay between floral notes and subtly roasted aromas. The wood is subtly and elegantly integrated.
Palate: Balanced between richness and refreshing acidity, this Chardonnay presents itself as an ideal food companion. The creamy texture harmonizes perfectly with the lively minerality.

Drinking window: Best enjoyed within the next 3 years, as long as the balance between fruit and structure is perfectly maintained.
Serving temperature: 10-12°C
