The protected Calvados varieties from Pierre Huet are obtained by double distillation of various ciders, which in turn are the result of 12 months of fermentation of apples in oak barrels.
The first distillation is used to distill the cider. The result is the so-called “petites eaux” with around 30 - 35% vol.
The second distillation produces the Calvados with 70% vol.
