The tuna fillets are cut by hand into small, irregular pieces and then mixed with the fruity, pure extra virgin olive oil from the first cold pressing. This allows the fish to be completely infused with the olive oil and essentially confit.
Both flavors enhance each other! An exquisite preserve made from succulent pieces of fish and the finest oil, tasting of sunshine and summer.
The name Émietté (from "miette," French for crumb) refers to a preparation method in which the fish fillets are gently flaked and then mixed with the sauce. This results in a wonderfully fresh, succulent composition where all the flavors are fully appreciated.
