Conservas Olasagasti is a family-run company steeped in tradition, with over 130 years of history dating back to the late 19th century. The story begins with Salvatore Orlando, a Sicilian who settled in Getaria (Gipuzkoa) in the Spanish Basque Country and married a Basque woman named Simona Olasagasti. In 1920, Salvatore Orlando founded one of the first salted fish factories and established himself as one of the leading producers of Cantabrian anchovies. He was one of the Italian pioneers who introduced the centuries-old salt preservation techniques to the Cantabrian coast.

The company specializes in the production of top-quality canned and semi-preserved products, particularly Bonito del Norte (white tuna), anchovy fillets, bluefin tuna, and Cantabrian mackerel, all caught using environmentally friendly fishing methods and processed by hand. Key products include Bonito del Norte in various preparations, Cantabrian anchovies (considered among the best anchovies in the world), and tuna and mackerel fillets in organic olive oil.

The company continues to follow the traditional, artisanal methods of fish preservation that have been passed down since the 1920s. The fish are caught during the main season, from the end of March to the beginning of June, using small fishing boats in the Cantabrian Sea near San Sebastián. Today, the company is run by the fourth generation, Matteo Orlando, and represents the perfect combination of sustainable fishing, centuries-old Italian expertise, and Basque tradition.
