Delicious, slightly spicy tapas of small squid in Escabèche sauce with Ibérico pimientos.
This recipe uses a compote of Pimientos del Piquillo (Spanish medium-hot peppers) with a hint of curry and a hint of hot chili, which intoxicates with its spicy notes. The squid marinated in the escabeche contributes a sweet sea flavor and a nice balance.
