The Poulet Baserri, the basis of this exceptional liver mousse, comes from the rustic "Cou Nu" breed, which was already kept by the grandmothers (Amatxi) in the traditional farms of the Basque Country.
These special chickens are raised using traditional methods for at least 91 days - twice as long as conventional chickens - and are fed exclusively with non-GMO French grain.
