The grapes of this Malvasia were harvested before they reached full ripeness, with the aim of obtaining a higher initial acidity.
The vinification was carried out with musts from three vineyards in São Jorge. By stopping fermentation in a semi-sweet state by adding brandy, the main purpose was to preserve the wine's natural sugars.
After 6 months of contact with the yeasts, the wine was racked in March 2009 and stored in 3 old French oak barrels, each with a capacity of 650 liters.
After 14 years of aging, including in these 3 barrels, Ricardo Diogo Freitas chose the number 547E as his favorite for this bottling. Bottled in January 2023. 1149 bottles.
Floral notes, honey, beeswax, yellow fruit jam and candied fruits. A rich and supple palate with a lingering honey flavor. Well balanced between sweetness and acidity with a round and long finish.
Serving suggestions and food accompaniment: Excellent as a digestif, with Christmas pudding, foie gras, passion fruit or caramel pudding, chocolate, candied fruit and cheese. Serve it at 13°-14°C.
Best served at 11/12 °C. This wine has been filtered and does not need to be decanted; it remains in good condition for several months even after opening.
