The best-before date for vintage sardines
High-quality vintage sardines have a minimum shelf life of 4 to 10 years from the date of bottling, depending on the manufacturer. However, unlike conventional canned sardines, these are designed for significantly longer storage.
Maturation like that of fine wine
Much like fine wine, vintage sardines develop over time. Stored in high-quality olive oil, the oil permeates the fish, making it increasingly tender and melting. The flavors become more complex and balanced, while the initial iodine note softens. Many connoisseurs appreciate sardines most after 5, 10, or even 15 years.
Proper storage
For optimal maturation, an intact can (without dents, rust, or bulges) is required. Store the cans in a cool, dark place at a stable temperature. Turning them over every six months ensures even oil penetration.
Conclusion
The best-before date is a legal requirement, but not an expiration date. For vintage sardines, it marks the beginning of their flavor development.

A sensitive and poetic artist with a colorful universe, Justine breathes life into Grand Nicolas, a sailor and fisherman who loves the ocean and its resources. Striving to preserve this beautiful universe with its delicate balance, he patiently watches over coral, fish and other marine treasures. In the distance, the Josephine Tower, the emblematic lighthouse of Saint-Gilles-Croix-de-Vie, proudly reminds of belonging to the region.
This jewel jealously hides the precious, melt-in-the-mouth sardines caught locally and in mid-season. In extra virgin olive oil, they can candy and soften up to 10 years after packaging. We recommend that you let them mature for at least 3 to 4 years before eating them. Your warm, buttery notes are then all the more pronounced and you will no longer feel the bones.

Even the ancient Romans valued sardines and ate them salted, marinated or smoked. To this day, the sardine is and will remain a high-quality product if the quality and production methods are right. Thanks to their short lifespan, they have absorbed very few pollutants from the sea and have a high proportion of omega-3 fatty acids, vitamins and trace elements. 100g of sardines (about 8 fish) contain 40% of the recommended daily dose of calcium and 100% of the vitamin D necessary to absorb the trace elements. In order for the human body to be able to absorb all of these valuable nutrients, it is essential that the sardine is preserved in high-quality olive oil, because only this oil allows the human body to break it down and metabolize it.
For the sake of enjoyment, however, you should definitely not do without the many other great creations from the incomparably rich range of flavors of canned sardines: sardines in a fruity sauce, in white wine, in butter, with water and lemon... try it out!

Manufacturer: La Perle des Dieux was founded in 2005 in Saint-Gilles-Croix-de-Vie, a once renowned fishing port in Brittany. The two founders are Philippe Gendreau, whose family has been in the sardine business for four generations, and Claudie Vardelle, a passionate foodie and former manager of a Parisian fashion store.
The love for sardines is the engine behind la Perle des Dieux, which is why all products are carefully made by hand and only freshly caught sardines are processed. Only vintage sardines are produced, which get better and better over time, and the design of each edition comes from selected young artists. This reflects the feminine side of sardine production - because women have always worked in the factories.
