Sardines Millésimées 2015 in a very limited series
These vintage sardines (millésimées) are fished off the coast of Saint Gilles Croix de Vie, a small commune southwest of Nantes that still relies mainly on fishing.
The design of this tin is by the illustrator Coralie Joulin .
Like fine wine, sardines mature over time and become better the longer they are stored. That's why many cans are labeled with the year of the catch, and are referred to as "vintage sardines." The sardine tastes best when the oil has thoroughly penetrated it on all sides. We recommend turning the can every six months and opening it after at least one year. You'll clearly taste the difference: the more mature sardines are noticeably more tender and flavorful, practically melting in your mouth. Younger sardines simply have more bite, the meat is much firmer, and hasn't absorbed as much oil yet.
