The Cailletier olive is grown only in the south of France, in the Alpes-Maritimes region, north of the beautiful city of Nice. That's why it's also known as "Niçoise." It's an essential ingredient in Salade Niçoise!
Cailletier olives are relatively small, oval, and range in color from medium green to dark, depending on their ripeness. They are aromatic with a distinctly bitter note. A small olive of great quality!

Note: As the olives are not pasteurized, a thin white layer may form on the surface after opening. This does not mean the product is spoiled, but is a natural process. You can simply skim off the layer.
