Breton seaweed, a source of goodness! The sea has so many more treasures in store for us than just fish: seaweed and algae such as the varieties Wakame and Kombu Royal used here are full of essential elements for our body: calcium, magnesium, potassium and vitamin B9.

The iodine notes of the seaweed harmonize perfectly with the finely chopped Provençal vegetables such as tomatoes, artichokes, red onions and garlic. The whole thing is seasoned with a hint of lemon and sherry vinegar, which adds even more pep to the recipe.
