The lemons from Menton, with Protected Geographical Indication (PGI), are distinguished by their unparalleled sweetness and intense freshness. Grown in the mountainous hills of the Pays Mentonnais, they are harvested by hand from January to March.
This dish is not only a treat for the palate, but also rich in Omega-3 fatty acids, vitamins and minerals for a healthy everyday diet!

The name Émietté (from "miette," French for crumb) refers to a preparation method in which the fish fillets are gently flaked and then mixed with the sauce. This results in a wonderfully fresh, succulent composition where all the flavors are fully appreciated.
