According to regulations, the Calisson contains at least 30% almonds; the Parli recipe has a proportion of 42% (the mixture varies slightly from manufacturer to manufacturer, as does the taste of the result).
The preserved melon, orange peel and blanched almonds are first coarsely ground and then even finer in an old 1970s machine with granite wheels.
This prevents the almonds from being crushed too much and thereby losing their oil and aroma: the texture of this paste should remain grainy. After adding fruit syrup, the paste is gently heated and left to rest for 48 hours.
