The recipe dates back to Mademoiselle Griffon, who was the forewoman of the Conserverie La Belle-Iloise for 40 years.
Like many Bretons, she too went to Saint-Jean-de-Luz in the Basque Country, the home of the bright red Piment d'Espelette, for the anchovy season after the end of the sardine season.
This is where she got the idea for this fantastic combination.
