The sardines with green pepper and kumquat transport us to a flowering garden with orange fruits. The sour taste of the kumquat, the vegetal spiciness of the green pepper and the benefits of grape seed oil, rich in vitamin E and omega-6 fatty acids, are found here.
Kumquats, also called dwarf oranges or dwarf bitter oranges, are a genus of plants within the rue family.
They are closely related to citrus plants. Kumquat is the English spelling of the Cantonese Chinese term "kam kwat" (golden orange).
The fruit is usually eaten with the peel and seeds; the peel tastes rather bitter-sweet, the flesh is usually very sour.
Rich in omega-3 fatty acids, vitamin D, calcium and phosphorus, sardines in oil offer an exceptional nutritional richness that lasts for years until the can is opened and consumed. Grapeseed oil, low in saturated fat and naturally rich in vitamin E and polyphenols (antioxidant molecules), complements the benefits of sardines in this recipe!
