Instructions for preparation: Warm the can in a water bath until the fat becomes liquid, then carefully remove the confit from the fat, pat dry with kitchen paper, place in a heatproof dish in the oven without fat until the skin is gratinated.

First, the pieces of meat are rubbed with salt; Mr. Vidal uses coarse sea salt from Guérande for this, and they are left to rest for 3 to 4 days. Then the meat is covered with its own fat and cooked slowly over a low flame.
