Instructions for preparation: Warm the preserves in a water bath until the fat becomes liquid, then carefully remove the confit from the fat, dab it on kitchen paper, place it in an ovenproof dish in the oven without fat until the skin is gratinated.

First, the pieces of meat are rubbed with salt (Mr. Vidal uses coarse sea salt from Guérande) and left to rest for 3 to 4 days. The meat is then covered with its own fat and slowly cooked over a low heat.
